Doing a beef tenderloin for the first time this sunday. I'm gonna rub it Texas style.

I did a whole one on my 22" years ago.
Take a therm, once the thick middle is at 123 ish you will have all bases covered.
Well done at the skinnier edges, perfect pink inside...
Pull it, wrap with cheap aluminum for 10 minutes.....
