• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Cooked some enormous ribs today. Salt, pepper, and onion powder after a slather of pickle juice. Cooked on the WSM with a mix of KBB and Kingsford Professional (I was between bags) with lots of oak and hickory chunks (also between bags). Started at around 250 and let it creep very slowly up to about 300. 7 hours total. Good eats!

Wow....great cook. Where in NJ did you find good looking short ribs like those?

These were from Shop Rite in Garwood. They didn't have them out...had to ask the butcher in the back, but he brought them right out.

They tasted great! I ate one last nigh and vac sealed the other three.

These were very tasty. I ate one and vac'd the rest. I now have 3 giant beef clubs in my freezer :)

Thanks! I sealed them away to discourage weeknight gluttony after eating a massive rib yesterday. Also, I hope to hand 1 or 2 of them away as gifts. Big meat gifts. But tonight I was dying to have a few bites. Sometimes things taste different to me when eating after not having been out in the smoke all day. Will see how long I can hold off before defrosting one of those giant sticks of beef.
