• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

All on the UDS. The ribs aren't the meatiest and are sill cooking. Pics when those are done. Here's a few shots of the armadillo eggs, boneless chicken wrapped in JD (scotch eggs) , and spam. These finished in 1 1/2 hrs at 240ish in the UDS. After several cooks on the UDS, I gotta say it's the easiest cooker I've used yet. Easy to control, rock solid holding temps, and just plain simple to use and clean. Oh, and all was smoked with KBB and peach wood.

Foil panned the ribs after 2 1/2 hrs then let them go for another 1 1/2 hrs. Noticed they were done then so just brushed on some baby rays and let them rest for 20. They were tasty fall off the bone but as I said earlier, not real meaty. Next time i will add a little more liquid when I foil/pan them as they were just starting to get dry. Here's the final pics.

Like the look of the Scotch eggs and Armadillo eggs, ribs look pretty tasty.
 
Looks tasty mate, I could go a snack right now
 
I'll take one of each egg and a couple ribs please!
