• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Beef Roast cook question

I have a 5lb-ish beef roast wanting to smoke on the ceramic. I would like it to be rare to medium rare. Never done beef roast before.
Should I cook it like a tri tip? Was thinking about 250* for 3hrs until IT it 140*.
What say you brethern?

On a side note: This is from a black angus steer I bought, and processed it ourselves 2 weeks ago. Man there is a lot of beef in there!

Depending on how rare you like it 115- 125 for rare 125-130 for med rare 130- 140 Med well
 
looks great!

I would go 125-130

it will rise just a bit while resting. I think 140 is going to put you over our target doneness
 
Rare center you're going to want to pull that roast at 110 or so, 140 w/carry over will get you well done.
 
And that's why I ask... Would have sucked to blow through the temp on this thing.

I agree with the gang. I'd take it to 125 max. Carry over will take it up 5-10 degrees.
 
Okay this is 131* IT @250 for 3 hours. Added a little bacon, onion and 'shrooms in the middle. Good flavor.
Wife wanted me to throw it back on until it quit mooing.
