• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Bbq catering with WSM

Hi everyone,
I would like to know why nobody had tried to do a bbq catering business with WSM ?

With 6 WSM on a trailer you can do food for at least 250 persons !

Could you tell me please ?

My guess is with a catering business you would want to make things easier. I would think tending 6 WSM's would be more work than just trying to tend one large capacity smoker.
 
^^ That and fuel usage. You'll get more bang for the buck with a larger cooking surface for the same amount of fuel.

Although it could be done.
 
It would cost more in time and effort I reckon. Tending six would be a pain but may enable you to stagger your times to keep hot food that requires different cooking temps coming regularly I suppose.
 
I've seen folks do that, with both WSM's and BGE's. It's a lot of work, and questionable if there are any benefits, other than that WSM's are cheap and available. Something more purpose built for catering would be a better answer.
 
So, this isn't the easiest thing (because you have 6 fires to check) and the fuel usage. Without this, it's possible to do a cathering bbq business with WSM

a WSM modified to put 4 grates (can put 6 rack of ribs), so 24 racks of ribs. Another one with 2 brisket (one on each grates)
Another one with Pulled pork (3 on each grates), and you can put 3 grates so 9 butts.

isn't it ?
 
Can it be done? Yes. Is it easy? No.

I've feed alot off my WSMs. I can put 12-14 butts on a 22 (I have two) and 10 on a 18 (I have one).

It takes much longer for me to cook it that way. I set them up on their side. Forget about getting to the bottom rack for anything. I think the ribs with four racks would be a nightmare, but that's my thoughts.

This is the reason I purchased a large spicewine.
