• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

low and slow. I cooked these for about 10 hours @225 on my smokin-it #2
 
How big are your bones! Beef ribs can be "plate" about 6-8" bones, cut down to short ribs with about 2-3" bones or even "flanked ribs" that are 1/2-3/4" bones. Usually the same cut and all can be great but with different cooking.
 
275, cook till probe tender. Start checking about 5.5hrs in. If you don't like a hard bark or a lot of bark, wrap when your bark gets the color you like. I use butcher paper. Good luck.
 
You are in for a treat!! That is the only thing I like more than brisket. Cook it like a brisket.
 
I've always been a pork rib fan. After looking at these pics, I think I'm a convert. :hungry:
 
Thanks guys. If they turn out like brisket, I can't wait. I haven't gotten them yet, so not sure of size. I'll smoke them Saturday. Can't wait!
 
They are an Industry standard Cryovaced item for your butcher -
they come in a 2-pack of 4 ribs each, called a 'short plate'.
 
My last ones were 300 for 3hrs, then foiled for about another 1.25hrs and they were done and my best ones to date. So tender.



If this isn't the best looking beef rib ever it is certainly in the top two. What did you cook them on?
 
I love beef ribs. I do find them to be a little "fattier" than pork ribs. I just like to make sure they are cooked a little further than the tenderness of my pork ribs. It renders out a little more fat and IMHO makes them even tastier. I also like to cut them up into 1 or 2 bones sometimes. Gives more bark and cooks quicker. I tend to cook them a little hotter than pork ribs as well. 300-325. Bottom line is you will love them! good luck
