• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

BBQ and Beer pairing competition - advice needed

Well Howdie to all you guys and gals,

I have now entered into my first BBQ competition this coming weekend where we are paired up with a brewery for one slow meat and one quick meat.

I have been given brisket for my slow meat and chicken wings for the fast meat. We will need to sample out aver 200 pieces of each food to the guests as well as hand in to the judges.

The guests will also have voting rights as will the judges.

While I am comfortable doing both brisket and wings, my question to you all is have you done something like this before ?.

Their beers are Mango Bango and Coriander pale ale.

My questions are - should I inject the brisket with beer, mop and with regards to the chicken, should I soak the wings in beer for a few hours.

Any assistance you can give will be appreciated

Are there bonus points being awarded for using the beer in the food, or is it simply the intention of creating the best pairing of food and beer? That would be my first determination in how much beer I would want to incorporate in the food.

With Mango Bango being a Hefeweizen, 6.1% and low bitterness, this would be the best match with the wings. I would look to do something spicy, probably a jerk wing. You could definitely incorporate the beer into the marinade. I would also run a test using Amchur powder in any spice mix that you use, to tie in with the mango and Indian theme of the brewery.

The Coriander Pale Ale therefore goes with the brisket. I don't find that beer flavor on brisket is a wonderful match, and would be hesitant to marinade/inject with too much of the beer. If you used a coriander/citrus prominent rub, that would tie in to the beer, and utilize the beer as a base for a sauce. Sounds interesting. I would try marinating the chicken in the Mango Bango while drinking some if I could get it. I would have done a test run last weekend. Not too late with the chix though. I can't speak for the coriander as I do not have enough experience with it

Thanks for the heads up, I am not wanting to try a new recipe like curry on my brisket as I dont have time to try it out before - Maybe I will inject it as usual with a mix of beef broth, Worcestershire sauce and butter - and mop with a little beer

Thanks mate - I am looking at doing the chickens in Mango beer - but maybe not doing the brisket in beer - it has me running nervous.

I was only asked last weekend to join the competition and got some samples of beer from the brewery - Love the guy - he said to me that I should drink the beer within 24hr after opening it - and I looked at him like - Seriously dude :)
 
I vote go with your normal brisket. Any reasonable beer should be good with brisket.

Yeah I think you are correct - this is not the time to begin playing around on my recipe. - Thanks
