Barbeque Leftovers: Pulled Pork Empanadas

Always on the lookout for good uses for leftover Que, I had a vision of brilliance. There was a whole mess of pulled pork leftover from last weekend, so I mixed up some salsa with a couple of handfuls of the pork and made empanadas.

Actually yes. The outside was very flaky, but just beyond that, it was chewy and soft. Very delish.

BBQ Sauce, pulled pork, bbq beans, and shredded cheddar. Those were some damn good leftovers!!:biggrin:
