• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Sean and I cooked both days this weekend.... perfect weather on LI...

Sat. was a "fun" day testing out some pork chops, wings & BBQ sauce for the Grill Kings grilling event the day before the BBQ contest and Chef's choice and sausage for the New Holland, PA BBQ SummerFest.

We tried out three different pork chop marinades/sauces and one definitely stood out. We also tested using center cut vs. sirloin cut, bone in & boneless.

We tried four different wing sauces - homemade thai/asian style sauce, homemade spicy fruit sauce,typical BBQ style, typical buffalo style sauce. We also tried whole wings and and cut wings. We found our favorite.

We wanted to try a dessert inspired Chef's Choice and came up with our first attempt at a dessert pizza. Basically a grilled pizza dough with a homemade lemon canoli cream, topped with grilled peaches dipped in sugar, then glazed with apricot preserves and topped almond slivers, and mint leaves.

We let the grill get a bit too hot and pizza dough got a little too charred and put too much cream but it tasted awesome and we think we can correct the appearance easily next time and mix up some ingredients to make it even better.


Today I got to enjoy my Fathers Day... Spend time with my little girl and cook BBQ in the yard. We cooked for our family and did 9 racks of babybacks all prepped with our planned contest rub & sauce, baked beans with pulled pork and the works of other ingredients, and two fatties stuffed with cheese along with grilled corn on the cob and grilled zuchinni and homemade biscuits. We thought the ribs were really good and were extremely pleased with appearance, taste and tenderness. The pics below are not the best racks but the ones on the top of the pile that got pics taken before we sauced them. Everyone loved the other stuff too.

That looks like ideal eats! I am hungry and my wife insists on doing dinner today. I am tired, catered a private party Thurday night and Friday morning. However, your pics have me thinking of doing something!

Thanks for all the postive comments...That dessert pizza sure was a nice finish to the weekend cook.

The beans had leftover frozen pulled pork from the week before.

Phil said no carbs at the bash, so dessert pizza is out but if we decide to cook it as a Chef's Choice at New Holland Rich (Lost Nation) will get a piece. He's been a big help to me the past month.

We've had some successful cooks the past few times out.... at least to my expectations at this point. Still, we're just hoping to pull it all together at contest day and not place in the bottom third..

We'll be doing a full overnight cook doing everything like a contest on July 1st. Everything will be outside, setting up just like contest site with all supplies and food outdoors. Only reason to go inside until Sunday around 1-2 PM will be to use the bathroom.

My wife is gonna kill me.....

Ya know, I'm getting ready for my 1st comp July 8th and I keep having that same thought go through my mind. I told her about getting into the contest and I could see the look on her face that said "great, that means nothing gets done around the house until July 9th, right?" It's not like I'm out running around every weekend and sticking her with the kid. In fact the only things I really get to do over the summer are 2 car shows, I cook for a particular band whenever they come to town (like once a year), and now this comp. Does that sound like too much to ask for a year's entertainment? I don't think so. The more I think about it, I think a little encouragement would be nice.
