• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

bacon wraped shrimp!!

Put peeled shrimp into italian dressing and let marinate overnight. Then wrap them with partially cooked hickory smoked bacon. Put them on inderict until the bacon is crispy. The reason for using partially cooked bacon is if you cook the bacon from a raw state on the shrimp you overcook the shrimp. I call this my Galveston Shrimp. I won the anything butt categorie at Carmel Ind. a few years ago with this. Hope you enjoy

We used to call it ‘Shrimp Louie’ and serve it with hollandaise sauce…
 
I do the Italian dressing marinade too, and the little lady loves 'em. She is a shrimp junkie and she says they are the best she's had....and she's had a lot. Has the stuff flown in from Galveston just for friday nites!

When I worked in a restaurant, we used to add bread crumbs or panko to the italian dressing, it would give it a nice crunch also...
 
isn't there enough citris in the dressing/marinade to start cooking the shrimp (cebiche style) if you let it go for that long (over night)??

That was my initial though... When I have done these I only marinated a couple of hours. I also put a slice of water chestnut in there for a little crunch. Rumaki mod!!!

I usually serve them with a sort of sweet teriyaki based dipping sauce.

Try this...

Bacon and Shrimp Fingers.

9 slices of bacon cut in half
1/2 pound of fresh shrimp
1/4 cup tomato juice
1 large egg
1/2 cup bread crumbs
1 tbs chopped parsley
1tbs lemon juice
1/2 tsp Worcestershire sauce
1/4 tsp salt
Black pepper to taste.

Fry bacon until half cooked and drain onto paper towels. place shrimp in a saucepan with enough water to cover, bring to a boil,remove from heat and allow to stand for 2 minutes.Drain shrimp, devein and chop finely.
Preheat smoker.
In a mixing bowl, whisk together the tomato juice, egg till well blended. Add the chopped parsley, shrimp and remaining ingredients and mix thoroughly with your hands till the mixture is tightend, adding more bread crumbs if needed.
Roll equal parts of mixture into fingers (approximately 18 fingers) , wrap with the bacon secured with toothpicks. Smoke until the bacon becomes crisp and then remove from smoker.(20-30 minutes)
 
Well it is really hard to beat just shrimp wrapped in bacon in its self. but all a water chessnut for some crunch. Nice.
