• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Aloha Gang,

My son's first day of his high school Junior year is today and since he brings home lunch he wanted some pastrami to take to school. About 10 days ago I picked up a 13lb Brisket from Costco, trimmed it then stuck it in a brine for 8 days. Then I rubbed on a mixture of Chefs cut black pepper, coriander, garlic, onion, and crushed juniper berries and set in back in the frig for 2 more days before smoking in my PBC. Here are a few pics I have to share:

Awesome! I love making pastrami on the smoker. Got a few pre-packaged, pre-brined on a great sale right after St. Pats. Soak them in water overnight to remove some of the salt, coat with a rub similar to yours.

One good trick I got was to steam it the last hour or so. Check out the instructions on amazingribs site here:
