Haven't had a smoker for some years now and I plan to build a UDS. I think this forum has got to be one of the best to get me started and I've already changed my plans 4 times.

Couldn't talk the wife out of the gas grill yet, but maybe when she tastes the first rack of ribs she will have second thoughts.

I got divorced from a "why don't you just use the gas grill so we can eat in 30 minutes or less" wife and am about to marry a woman who loves the smell of burning wood on me. But maybe your rack of ribs idea might be a better first option! Welcome aboard.
