Got some on sale at Walmart and put them on my smoker with my beans and brats....

They have a beautiful color, but when I cut them open, the texture had a weird consistency I have never seen before. It was actually unedible looking to me...

Is this the solution they added? I knew not to get ones with that but they were on sale so I tried..

Enhanced ribs tend to end up hammy (tasting and looking like ham) because of the sodium solution they inject them with. Unless they were bad to start with they should be edible, but probably won't taste much like ribs.
 
I always use the kroger enhanced spares... only difference i have seen is they are a little salty, i just cut my salt back in the rub.. far from inedible though:(
 
Well these did look like ham and to me made me almost puke... not the consistency I have ever had in a rib....never again..good thing I made the best baked beans, potato salad and brats I have ever made!

The solution they use to "Enhance" meat is very high in sodium, which cause the hammy flavor and look of the meat. Soaking them for as long as possible in clear water, changed every couple of hours helps. You know they have to sell as much of that animal as they possibly can, even if they have to enhance it!
 
I've had the WalMart spares and babybacks. probably not the best quality, but I've never had them be inedible.

You might have gotten a bad rack(?)
