about how much time do you think it is going to take to do a full grate of chicken thighs? I've read where people do them at 250 and some that do it at 300.

I do 4 lbs at 260 in an hour to an hour and 15 mins on my UDS. Family loves em. Just coated with montreal chicken seasoning
