Hello all. I had someone tell me about some bbq they ate that had been smoked with a mixture of apple wood and actual apples. I've googled the heck out of it with no results. Anybody else ever heard of this one?
 
Maybe you put apples on the meat?

Well it was secondhand information, but the guy did definitely say apples on the fire. He said it was good, but this is southeast Louisiana where the general public have yet to grasp what good BBQ actually is.
 
I have actually done this. A member on another forum ( MrGrumpy ) told me about quartering apples and throwing them on the fire every hour or so. Makes some sweet smelling smoke. I couldn't really tell it did much for the meat but you can smell it for sure.

i have done the onion on the coals thing, and it definitely flavored the meat........seems like apples might do the same.
 
I'm an applewood fanatic with my reverse flow Meadow Creek. Was literally talking about suppliers moments before seeing this post.

I will try this, quartered and/or halved apples for smoke, as soon as possible and report.

IMHO it's hard to oversmoke with seasoned applewood.
 
Seems to me the apples would first start steaming, then some caramelization and then a burnt sugar odor, but overall, not a bad experiment. Not sure how much it would effect the final result though.
