The cook on the offset was around 6 hours per my notes. Honestly, that was not a planned cook method. I started it on the pellet smoker but 30 minutes in the pooper was having flame-out issues, so I bailed and went to the offset. My notes are not real detailed. I recall it as a frenzied effort to save the meal.That looks pretty good. You've almost convinced me to try it again. BTW, how long were the cooks?
The cook on the pellet pooper was 8.5 hours plus a 30 minute rest per my notes. It ran initially at 180F for 2.75 hours to try to increase smoke flavor. I then changed it to 225F setting and periodically bumped it up as the cook was running too long.
