I got into this stuff about three years ago now. Bought a Brinkmann Smoke-n-Grill electric, tried cooking on it in the frozen tundra,and turned out several "mud-flap" quality briskets because I could not get the temp over 180. I then, bit the bullet, and bought a Klose (which I believe to be the finest quality offset you can buy) 36 x 20" backyard model largely because the Jamison's recommended them in their book. The first butt I turned out almost made me cry! The first year, I had enough requests to cook for golf outings and grad parties, I started mulling over the idea of going larger. I had been posting on www.bbqpits.com (the Klose forum ) and www.texasbbqrub.com and soaking up alot of Tejas wisdom, so I felt well prepared. Last April, I took the plunge and took delivery of my mobile. I'll post some photo's at some point till you are sick of em. Well, the first year, simply through word of mouth, I paid for the pit on 5 gigs. I cooked for 75-300 people. Cook all on site. Offer 2 meats, 2 sides, dessert for $15.00/person. I incorporated, got insurance, outfitted myself totally for appx $20,000. I figure to hopefully do 7-10 gigs this year and pay off the initial investment. Also, we formed a comp team (a couple other Klose owners) and did both the Michigan (yuck) Cook-Off and the Ohio (yay) Cook-Off. We did not place overall, but we tied Famous Dave's in Mich for 10th out of 61 in ribs, and took 9th out of 31 in Pork and 2nd in chicken in Ohio! Well, it has been alot of fun! Met alot of BBQ folks and looking forward to prolly meeting some of you! Been to Tejas three times now! Guess I've had too much coffee! Much more later! The Woodman
