• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Anyone got the coals glowing today?

I finally had time to put my turkey in. Tony C's inject and seasoned outside. Couple of hours left.
 
Rok, six slabs of babybacks, on for an hour now. Can't wait for dinner!
 
Almost done (setting at 172). I'll use the legs and wings in some turkey soup this fall and carve the breast up for dinner.
 
Looking good. I usually smoke or fry legs and thighs throuout the year. The Tony C's is alway in and on the bird parts, smoked or fried.

When I finally drive down to get my Klose, some legs will be mixed in on the first smoke, along with fatties and whatever main meat I decide on.

Do you crispen the skin over the hot coals when you'ree done?

Ty, This one went at 250 for 5 hours (probe at 172 in the breast carried to 176). I sprayed lightly every hour. The skin got crisp without putting it over the coals. Used a couple of mesquite chuncks and the smoke flavor is great.
