• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Just put a 15# brisket in the WSM along with a pork shoulder( dont know the weight) Getting it all settled in then getting up about 5am to start the big cooker for 3 racks of spare ribs and some corn. and what ever else i can toss on there. just cooking for 4 people, but most of it will get vaccu-sealed for me later on :). anyone else cookin tonight ?

8 butts, 2 sausage rings, 2 london broils, 8 lamb chops, 3 racks of ribs, 2 spatchcocked birds.

and.. nope.. no one was here to eat it. :) Nearly all of it went to somewhere else.. just felt like cookin. :)

man oh man.. shoulder and brisket chuggin away at about 250* in the WSM. woke up to it raining outside. i hate cooking in the rain. lol.. tryin to decide if i wanna do the ribs in the WSM and pull the brisket off and put it in the oven or go ahead and fire up the big cooker.
 
Storm cleared out for a little while came a real turd floater.
heres a pic of her goin under the rainbow!!!On the down side.. The rained ruined all 3 of my digital thermo's i had goin in WSM. didnt get em put in baggies in time before the rain came.

For Opening Sunday I have a pork shoulder I put on lat night at 1 am.
I figure it will be done in time for pulled pork sammages by the 4 o'clock game!!! and again at 8:30...

You guys on a diet? I cooked 2 18# briskets, 2 shoulders, 12 racks of spare ribs, 10# smoked wings, and a double batch of Keri's apple pie baked beans fpr the neighbors. All turned out great! Was working on some modifications to my ribs and butts that I think helped.
 
just pulled brisket out it is resting in the cooler. still amazed at how a 15# brisket is done in 10 hours. cooker ran about 260-265 all night. shoulder sittin at about 185. ribs should be coming off about 1pm or so..
 
I put some chicken thighs and country style ribs on about 10:00. Got the chicken off about 11:45 and had two down me by kick off. Turned the BWS down to 215 to finish the ribs and put in some beans. Trying to slow them down so they are ready for the second game, but I just went down and it was over 300. I put the plug in the guru, so no air going into the firebox - trying to burn out the fire, if I don't open the door it should stay over 200 for hours.

I love the picture of the rainbow! For the thermometers take out the batteries and put them near an air vent and let them dry for a few days. They should be fine.
 
heres the finished product.. All came out great. made sure i cooked enough i could vacu-suck most of it.. The fiance's parents are gonna take most of it to Colorado now lol.. oh well gives me an excuse to cook next weekend maybe. oh yea.. dont mind the date. i didnt set it after putting batteries in the camera lol.

It all looks great! Wish I had pix from my block party cook but my 5 year old took out our digital camera so I may be without any pron offerings for a little bit. Just vacu-sealed the left over ribs. Almost everything else was pretty well sucked down.
 
I cooked some appetizers to bring to the neighbors house for the Bear's game :cry:. At least the food was good!

I started this morning and cooked some fatties. One Sage, one Italian and two regular.

Once they were done I assembled my ABT and stuffed mushroom kit...

For the turds I slit the peppers on one side lengthwise and cleaned out as much of the seeds and veins as i could. Then I mixed chopped regular fatty, cream cheese, shredded cheddar and jack cheeses, onion, some of Brauma's roasted garlic powder and some of Jay's Hen and Hog Dust and used that for stuffing. Then I bacon wrapped the ABTs and cooked for about two hours. For the stuffed mushrooms I chopped the mushroom stems, some sweet onion , some green bell, some yellow bell pepper and some of the sage fatty and sauted them in butter until the onions and peppers were tender. Then I stirred in some chopped corn bread and stuffed the mixture into the mushroom caps and they cooked for about an hour and a half.

I also made my variation on Phil's cheesy bread. I started with garlic bread from a local bakery and baked it in the oven just until the top was getting brown. Then I put on slices of tomato, green bell pepper, yellow bell pepper and sweet onion and put it in the cooker for about 20 minutes to soften the veggies. Then I added shredded cheddar and jack cheeses (I didn't do the cheese on the rack above trick) and let the cheese melt and start to get bubbly.

If you go back to the lang pictures, they are b4 and after I cleaned it up and covered it with a can of lard-a guy had it for sale and made me a deal I couldn't refuse -Bigger than I needed-maybe not- all my friends are eating well

And, that Lang 84 with the warmer will make you really happy-- one heck of a cooker!

That was alot of fun. The poobah cant handle a little sledneck vodka drink though! The best paret of the night was "blowing up the spicewine"I think i still smell some hair buring
