• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Any tips on grilling scallops?

Just bought some sea scallops and was wondering about the best way to grill them.
 
I also have a fish basket that I use with these so I can flip them all at once or move them all at once.
 
I marinate them in some lime aide (paul newman or minute maid brands), a little extra virgin olive oil and some old bay seasoning. Marinate for 10 MINUTES or so. Watch out because the acid in the lime aide will start to "cook" the scallops if you leave them in too long. ever have Cerviche?

I cook them in on a small mesh grid that keeps them from falling thru the grill grates. I'm not a fan of the fish baskets for this because each scallop seems to have it's own cooking time. Enjoy them.

Edit - don't forget to add some crushed garlic.
 
I ususally skewer them and wrap some bacon around them.

Don't over cook. They will cooke quick on you. Basket or mwsh grate will work well also. I usually brush with melted butter with whatever seasoning you feel like that day.

Yes, and may I add this is one hell of way to have the most tender calamari or shrimp, EVER!!!

Back to the scallops. You will hear tons of ways to grill those bad boys (I love um). I will have to agree with everyone at this point. You can never go wrong with wrapping anything in bacon. Also, you can never go wrong with skewering them as well. Brooklyn's marinade sounds great and his advice is sound--to much time in any acid will start to cook your seafood.

May I suggest for added flavor take some nice Rosemary stalks, remove most of the leaves (safe for other dish) and use the stem of the Rosemary as your skewer. The flavor of the Rosemary will permeate throughout the scallops! In the past I have infused Olive Oil with Vanilla Bean and then coated the scallops prior to grilling with the vanilla oil. I served these over plain Basmati Rice with a Mango Jalapeno Tartan'.

The sky is the limit. Another time I used some of the "Taste os Thai" Thai Panang (peanut coating) mix and seared scallops on a very high heat. Served these over Soba Noodles and a lemon grass curry sauce. Ok, now I am really hungry, see what ya done to mah!!!
