• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Any body cookin' this weekend?

It's raining now and supposed to for the duration of the weekend. Doesn't look like I'm gonna get burn any wood til next weekend. Anybody got anything in the cooker?

When I woke up this morning I already had 4 butts rubbed & waiting in the fridge.

Raining.

Then I remembered Kick's avatar. And the idea became reality. :D

Im going to make an atempt at a quartered turkey and either a brisket or butt on sunday. I think the rain here in Montana has let up for a couple days atleast. A bad day of Q'in is still better than a good day at work!

I am cooking three slabs of babybacks in the morning in preparation for my 1st cook off in September.

I'm making three briskets and a pound of Alaskan Sockeye Salmon. The salmon is already on and off...2 hours and turned out pretty darn good. The briskets have been on now for 5.5 hrs. They are place every 3 rack levels down from the top. At 5 hrs the top brisket was at 158, middle at 165 and bottom at 192. I've kept the temp between 220 - 250 most of the time thus far.

As a new twist, at that 5 hr mark I swapped the top & bottom briskets in rack position. Then, I took out the new top and middle, scrapped off a bunch of fat (packer briskets), re-applied rub and sent them back in for more. I was thinking I should wrap the 192 brisket and coast that one into home...but wanted to try this method out. Gonna let 'em get "pretty" again b4 wrapping.

Hope this doesn't suck...
 
I got three racks of ribs and a flat going now going to have a good dinner tonight. Whats this reain you speak of, it does not seam to occur out here.
 
Did a pork tenderloin. 3 hours in smoke 1 in foil in teryaki seasoning. It was okay, but should have smoked longer before foil and then finished on the grill to carmelize the sugars then put the teryaki back on top. Did I say foil? Yeah, I used foil.

Hey Ya'll,
Yesterday it was hickory and coconut smoked turkey breast. Today it was three racks of hickory smoked baby backs. I tried the McLard's sauce, "as seen on TV". It was O.K. A little strong in the citric department. I did a taste test with the "Basic BBQ Sauce" that I made myself. Guess which won the competition?

I tossed a few Cavanagh spicy sausages from Sam's in the mix for snackin'.

The swamp is just two short weeks away. Yahoo!

I don't want to rain on any ones parade, when you don't have a job, the worst thing is NO MONEY, the second worst thing is NO WEEKENDS to look forward to :!: :oops: Every farking day is the same, except CNBC does not cover the markets on the weekends....that is the only way I know that it is the weekend :!: :shock: :?
 
I bought my first smoker last weekend, no time to do anything but build it and season it. I want to smoke a couple of briskets this weekend. I have had some really good results with indirect cooking on a gas grill but very anxious to try it the low and slow way. A way bigger cooking surface than I am used to, I might try some beer can chicken while the smoker is hot. Seems like a waste of beer, but I'll probably change my mind after I eat some.

Try using Mikes Lemonade for your chicken. But if you want to try beer make it the cheap stuff.
 
interesting.... lemon chicken type... by the way , I work in plano. small world.
 
Point taken.....I'm working on being more grateful and complaining less.
