• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

By the pics, you cooked that butt perfectly. Cholo looks like a happy dog.

Thirdeye is right that big meats like Butt and Brisket will sit at a temp that's not quite done for a LONG time, and then once it pushes through... BAM... you better be ready cause it is going to race to the finish. That happened to us at contest today and our briskets got WAY overcooked... and we still pulled a 10th place call out of 63. (Stunned.)
 
hahaha, I doubt any time soon you will be asking me for tips on anything except for the truck but hey it is something to shoot for right! I gave some of the small butt to a couple of friends and they fell in love, it went so well with the blues hogg too, like it was made in heaven!
 
Oh, and by the way, that is Buddy, not Cholo, wife wanted me to set the record straight!lol
