• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Another Butt Question

I guess I'm still considered a newbie. Only had my Bandera for about 6 months. Made some OK Brisket, some great ribs, and an awesome Prime Rib so far.

I'm about to tackle my first Butt. Actually 4 of them. 8-9 lbs a piece no less. I've done one in my weber before. But never this many at once.

So my question is how long to smoke 'em? I know it supposed to be ~1-1/2 hrs per lb. So I'm going to assume that I should take the weight of the largest one and use that. So that would be ~13-14 hrs. Does this sound right? Or should I plan on 2-3 hours longer due to the amount of meat?

Butts vary ALOT, I estimate hour:15 pr lb, but Ive seen 8-9 lbers take 20 hours. The batch I made last week 2 btts, 2 briskets were only at 175 after 16 hours. I was shot at that point and transfered them inside into the oven wrapped in foil. Bottom line, estimate at 1:15 Lb and they're done when they're done. I dont know how much credence I give to more meat taking longer. I always wondered about that, if you maintain 250, the volume of meat once heated shouldnt make a difference. IMO

And keep them sprayed down with apple juice so they don't dry out. You may have hot spots in the smoke chamber that may require you to rotate the product around so be sure to check the temp in all four butts.

I don't think I've ever had two butts cook the same yet. Good luck and let us know how they turn out!
