• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

i know another brisket question.... But my brisket probes like butter up top on top of of the point and flat, but is a little tougher probing on the thinner part. Is it done? Would you guys pull it off?
 
Sounds good, I'm just trying not to overcook it, I've done that on the previous 2 briskets I've done
 
Pull it when the thickest part of the flat is Probe tender

Are you sure? Unless it falls apart into something that resembles pulled/shredded beef it isn't overcooked. If it is dry but the slices hold together well--it's undercooked.

If it is overcooked the solution is to cook less.
