• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

It's Sunday. Pigs are delicious and I'm hungry. Don't eat sugar do there's none in my rubs or sauce. Paprika, garlic, onion, salt, pepper and cayenne. Wife bought 2-16# bags of Kingsford for 9$, so I'm using it for the first time. The come boneless from Costco these days, so I tied em. I'll pull em when probe tender. My family prefers them sliced over pulled. More pics after church. P.S. I almost burned off my eyebrows, that Kingsford took off like a rocket with the lid open during warm up.. #jetturbineengine

I am also doing tied up Costco boneless butts today. Testing out the Kingsford competition (low ash) briquettes on my Kamado for the first time. I DID lose half my eyebrows when it took off and I forgot to burp the lid when I opened it up to set in a drip tray.
 
So you get a much more even cook by tying the butts just like in an oven or more to hold its shape?

My answer is both. I didn't want a combo of thick and thin pieces. I also want the end result to have some bark mixed in, but not too much so I didn't thin the whole thing out like I would do if I was making shoulder bacon. I normally use bone in for pulled pork, but I bought this one to cure until I picked of a 10 lb belly which is now curring in its place.
