After a long hiatus -- Peruvian Chicken

Hope everyone is well. Been crazy busy the past few months with a lot going on (mostly positive) and I hadn't really done much smoking, grilling or chilling. Wanted a meal that was somewhat lighter with this crazy heatwave.

The 26 cart was idle for too long as you can see so I decided to use it for this cook



Couple of chickens



The marinade



Getting happy overnight



Made a Aji verde and Aji amarillo



SnS with lump charcoal fully lit and the chicks indirect



About 90 mins later ready to come off



Served with salad and steak cut oven roasted truffle fries



And the sauces





Definitely did not disappoint. I for sure will do this a lot more often. Everything just pairs so well especially when the sauces are put into the equation. Thanks for looking!!
