• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Got another question in the FAQ requests. Moved it here instead of FAQ.

I have a small Bandera that I bought from Walmart and I am running into trouble with consistancy of the heat and that transforms to the end product. If I use lump coal for Babybacks, how much charcoal do I use and how far back from the coal chamber do I set the ribs back. If they are up too close they get too much heat so is the middle pretty safe. Then I gather you cook them 221? Also for the last hour, is that when you want to slather the sauce on?

Not sure what u mean by a "small bandera". Whats the name of your cooker? Is it a vertical like a bandera?

without knowing which cooker you have its hard to say how much fuel you should use. Start witrh 3/4 chimney and set it in the middle of the firebox. Use the firebox damper to control temps, but never close it much beyond 1/4 to 1/2.

If you have a small chamber, put the ribs far away from the firebox and maintain 225 degrees where the meat is. 221 is only an estimate and in a smaller chamber, you may be done much sooner than that. foil when the tribs pull 3/8 of and inch form the tips. Then foil for an hour and check for doneness. 2 hours foiled may be to much in a smaller box.

Give us more info on the cooker your using so we can answer better.
