• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I’m looking into competition bbq, and tomorrow will be a test run on 7 racks of ribs. I’m going to prepare them 7 different ways to see what works best. So I’m up for some suggestions. I have some jerk seasoning that I will be putting on one rack, and I will use my normal rub on one rack. Then I will probably use a commercial rib rub (I saw where someone on here used Emeril’s rib rub). I’m going to baste at least one rack in Dreamland sauce. I’m open to any other suggestions.

I’ll post some pics before and after when I’m done.

I’m also going to make some fatties stuffed with jalapeños and cheese. I did some of these for the holiday and everyone loved them. I have to say it was some of the best sausage I’ve ever had. I used the 3-2-1 method for the first time and it was worth the wait.

Them ribs and whiskey is goin be good while I’m watchin my DAWGS whip up on the tigers

Best of luck. As a new team also I have been getting alot of advice too. The one thing I hear again and again, is be cognizant of where you are cooking. Chances are if you are doing a contest in Carolina, sweet and thick sauces just won't score well. The second thing I hear recurrently is cook for yourself not the judges. Let us know how everything comes out. One thing I can bet on is that this competition is addictive and that will enjoy the company of some of the nicest and helpful folks you will ever meet.
 
Try salt and pepper on one slab. It will give you a good idea of what the smoke actually does to the meat. It also makes it easy to compare what the spice does to the other six.

As for changing us your entries based on what part of the country you are cooking in, if you have a winner already, don't make those changes. Winning KCBS cooks don't make regional changes the way other folks think they do, and those guys like you to think they make those changes . . . . . hope I got that out right!
 
Sounds like a great way to spend the day. Just be careful you don't mix up the ribs. Whenever I try to do a couple of variations in one cook I wind up mixing them up and forgetting which ones which!

Toothpicks, pencil, and paper work here. ie:

Zero TP=Salt and Pepper only.
One TP=???
Two TP=???
etc.

And, when you are done, you and your judging team have 21 Toothpicks to use :-D

I was going to suggest permanent markers...
