• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Gonna be at LJT chili cookoff and music festival in afew weeks, plan on taking brisket ribs and chicken, and frozen charro beans made a few days before, will it be safe to store this meat together in a cooler packed with ice? just worried bout cross contamination.

FatDaddyMan,
As long as the meats are Heavily wrapped in plastic bags and that you MAKE sure they do not leak, it will be OK. The trick is to get them in the proper packaging. No big deal.
Smoke On!!!!

gracias mi amigo!!! im so stoked about this festival, cookin for about 20 peeps plus 1- 2 Texas red dirt bands im friends with.. gonna be a blast

Keep it cold, and well wrapped. If you have a foodsaver use it on what you can fit in the bag. The extra protection never hurts, and those bags are fairly stout.

Just to show my stupidity, why is cross contamination a big deal if you keep your meat good and cold, then cook it real good when its time.

I've heard alot about not using the same utensiles, cutting boards, dishes, etc with different meats (unless they have been cleaned).

(I wish I could post stuff like this anonymously!! I also wish I could spell better)

Those XXL Ziplocks work well for the larger cuts. Get as much air out as possible.

I assume everthing will be pre made and frozen, not just the beans?
Seal everything up as Jorge and Thillin said and you should be fine.
