Here is yesterdays cook for T-Day. One turkey for us, the wifes parents found out I was smokin so they had to throw one in, then we decided that since turkeys were on sale to do another one just to cut up and freeze, then my neighbor asked if I could throw some ribs on for dinner. Then that made me hungry for beef ribs for some reason so they were added to the party. Anyway, the turkeys were brined overnight with 1 gallon water,1 cup kosher salt, 1 cup honey, and 1 cup molasses for each bird. Then just before they go on I put some melted butter with salt, pepper, and granulated garlic on 'em. I like white pepper but had to use black since the spice fairy stole the white pepper I "knew" was in the cabinet. Smoked with hickory and cherry. Then a couple hours into the cook I baste them again with the same mixture. They turned out nice. Also smoked all the giblets for the giblet gravy.
