• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

2 fattys, 2 birds, 3 racks of baby backs, whole mess of brats

The fattys were better this time. Not dry.
For the beer in butt chickens, I used actual beer, Shiner, for the first time instead of an available soft drink. I think it turned out better.
Went with bbq sauce on one of the 3 racks. All were fine. But I need to figure out the flavor that I want, then go after it.

I grilled a couple of brats on the gasser for our early lunch. Ate them with spicey mustard on the big biscuits that I had placed in the smoker for the biscuit trick. wow. very good stuff.
I'm afraid I like the brats grilled this way instead of smoked. Oh well. No shame in that I guess. The space in the smoker for the brats will just have to yield to some other goody.

This biggest satisfaction of the day was sharing it all with a couple that we had wanted to entertain for. In the back yard. (just a few hours before the /rain/!) He brought his guitar and sang a few. He's really good. It was a damn fine evening.

When I do beer butt chicken, I always take a church key and pop a few more holes to allow more pentetration of the steam. I also put some of whatever I'm seasoning with down in the beer.

There's nothin' wrong with letting a brat have a dose of smoke (an hour or so) then finishing it on the grill. Best friend mustard ever had!!
 
Here are pics from my first attempt last week.

Notice that I have to level my smoker on the very slightly sloping patio.

Yesterday, I made sure I cooked that fattys with a thermometer in one. and pulled it at 160-170. Not nearly as dry. I also turned them once as suggested. and didn't use a foil "try".

Didn't have baffle mod, so had to be sure back of chicken faced the opening and pushed to opposite side. worked.

good job, now make you a baffle, and take some steel wool to that fire box and nock off the loose stuff. Give it a good oiling. I always use pam, sometimes bacon grease.

ANd what happened to your wood?
