I've not really tried the 'mopping' technique, but I think I'll try it on the next batch of ribs.

Now I need to go find a can of corn or something.

Applewood chips
Zatarains Creole Seasoning for Rub over a base of vegatable oil (hey, there is the veggie)
Chicken yanked off the grill at about 180*
BGE steady at 250

Needed to 'kill' 2 meets with one stone....
 
Looks awesome.

If we combined your two meat no veggie thread with Derek's two veggie no meat thread we'd have quite the meal.
