Breaking in my new Chubby. 1st time time cooking a Chuckie. Rubbed them with Montreal steak seasoning. Using lump with hickory + apple chunks. Wish me luck.

1st Fattie

Thought I should do my 1st fattie. Sweet Italian sausage stuffed with salami, provolone cheese,roasted peppers,onions and bacon.

Those chubbies are cool, if they didn't weigh 200 pounds I would have had one by now.

No chuckies tonight

10 1/2 hours chuckies at 192. The fattie was really good. Served with the better halves rice and tomatoes. More prons tomorrow . Thanks guys.

Chuckies were about 4 1/2 lbs each. Took almost 12 hours at 225 to reach 205.
Just warmed one up on the gasser and pulled. Great stuff.

I do so love a good chuck. Nicely done! I'm assuming you're happy with the chubbie?:becky:

It worked great. Took a little bit longer to get up to temp than I'm use to. After that it stayed right at 225 for 5 hours on the 1st load of lump, than went 7 hours on the 2nd before I shut it down.
