• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Well here I am at 4:00 EST. The butts been on since 7:45 this morning. Looks like a late dinner. I'm learning that the silver smoker temps don't sit still. I tried rocnrandy's fire method. Works ok, but I didn't get 5 hours per fill. More like 3. I've been pretty good keeping the temp between 220 and 240. Nailing a temp though seems impossible! Lots of damper play. How often do you guys spray? I'm spraying on the coal refills and anytime the temp gets too high. Ron

Ron, It probably depends on the size mesh that you use and not opening the lid until needed. I kept the damper closed 90% of the time to maintain constant temp. I spray every hour. Do you have any pictures of your fire grates?
 
I only spray really good right before wrapping it in foil to put back in the smoker. It stays juicy with a hint of apple.
 
Did my first butt yesterday and, (thanks to all the advice from this site), it turned out Grrrr-reat! Got family in west Tennessee and i always bring back a few pounds of pulled pork when we visit them; next time, i'm taking pulled pork to Tennessee!
 
I would also like to say how helpful the advice here is as my pulled pork turned out awesome. I am now the proud owner of a digital camera so I can finally take pic's of my masterpieces. :lol: I will share them. My next cook is bb ribs this weekend since I farked these up 3 times now. I am confident these will be great. Brisket is my next challenge next week.
