• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Hey everyone,
I am going to do my first brisket this weekend on my Ugly Drum Smoker. I have a couple of questions:

1) Do you spritz a brisket or just leave it alone to cook?

2) AS far as wood smoke, I am a woodworker and I have a 40 gallon drum of small oak cut offs, will they work for smoke, or is that a problem?

Sounds to me like you got the right combination to do this. No sprits, just rub. Have fun. You might want to use a pan for the drippins. Mine don't sweat much until the temp gets way up. I like to pull about 200+

That's good to know... I'm duin my 1st brisket starting 2moro @ about 6 pm. It's a 14 pounder. I've also got a loud- mouthed brother that claims to be the best Nebraska griller. It's a "run & gun" between us.

Still looking for an answer about using oak wood scraps / cutoffs for smoke on a UDS.

The one problem with lumber scraps is that it is kiln dried to get to that low moisture level that you need to build furniture. These tend to torch pretty fast and not give up much smoke. You can soak in water to help with this,but it is not the same as aged rounds. Give her a go, don't spritz, and don't sweat the cook. Post results.
