1-16-98 is our wedding anniversary. Maribel gives me a great present.

Fuentes cigar.

The brisket went on the pellet smoker. Minimal trimming and seasoned with meat church holy rub.




Wrapped after it hit 170 and check for probe tenderness at 195. It was a success







Still have point. Will have to eat that another day.



This was my 3rd brisket in my whole BBQ career. It was my best so far. Can't wait to do this again.
