Bought a 12 lb brisket from HEB for $1.77 a lb. My wife says we don't need one but I feel like when you get one this cheap it's more like getting more under my belt and getting more practice. Anyways. I cooked it roughly 275-300 until I liked the way it looked. Wrapped it up in butcher paper and let it get right. Along with cooking the brisket my 6 month old son hung out with me by the smoker all day. We had a good day! Only thing is I didn't let it rest at all like I should have.
