• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

1 st Big weekend cook

Good luck with the cook. I'm sure it will turn out great.

Are you doing beans or any other sides?

Looking forward to the Pics

no side just the sandwiches and chips. Got to keep it simple they have to eat in the stands at the stadium. i figured on 2 8 oz sandwiches per player.

You have 90 to feed, and you want to feed 16 oz per person... please forgive the observation, but it doesn't look like you're considering the shrinkage that you'll get on pork butts.

90 lb raw pork butt will cook up to something like 45-55 lb of usable meat. I usually see the final meat weight from a 7-8 lb pork butt at 4-5 pounds. I'm not cooking and weighing them out to sell, mind you, but I frequently cook them and package the meat in vac bags, marking the weight on the bags for future reference.

If you're shooting for 90 lb of servable meat, I would consider at least 40% shrinkage and do 90 lb divided by .6 = 150 lb. If your average butt is 7 lb, that would be about 22 butts. Thus raw weight 150 lb x .6 usable ratio = 90 lb usable meat. 90 lb usable meat / 8 oz = 180 large sandwich servings.

Definitely don't want to run short with the football team! :-D

Or you could make smaller .3lb sandwiches. They'll be happy either way.

I agree with my fellow Tennessean. More sandwiches. Not everyone will eat a full pound of meat. It WILL take up more room in their stomachs with more bread though.

Smaller sandwiches it is. Thanks for the help guys. i just did a test and 8 oz is to much going to .3lb as suggested. Have pics up tomorrow.
