    When do I pull this chunk of meat??

    This is a whole sirloin tip and it weighs about 12 pounds. I rubbbed with some Dizzy Pig Red Eye Express and am letting it ride on my egg at 300 degree dome temp? What temp internal should I pull it? Cook like a pork butt? Don't really know what to expect since I've never cooked one.
