Cooked a butt using BigMista's pork rub. Injected the butt with a mixture of apple juice, soy, and spices. Let it sit overnight. Rubbed with BigMista rub and smoked with Cherry and Hickory on my WSM. Came out great. Everyone really liked the rub. :clap2:
Hi all.
I did a 5 day pickle (2 cups salt/gallon, 1tbsp pink salt, spices). For the corned beef I rinsed it well and simmered until tender with an onion, carrot and celery. It was great tasting and was fall apart tender. Wow!
The pastrami was the same 5day soaking but went with a 12 hour...
Country and I went to cook with Big Brother Smoke again this weekend. He had a wedding for about 175 people somewhere north of Santa Barbara. I lost track of where we were after riding so long.
The wedding was at a secluded spot way up in the hills overlooking the ocean. Beautiful Spot...
Made some spaghetti last night with some leftover smoked chicken I found in the freezer and 1/2 an Italian Jimmy Dean Fatty. Tasty Stuff!
