Default Hello from Santa Barbara CA!

Hey whats up guys,
My name is Jim and I'm from Santa Barbara CA, I'm from Texas so I'm big into BBQ but California doesn't really know what BBQ is...Ha, I love cooking Tri-tip, I smoke tri tips/chicken/ribs all the time using California Oak. Right now I'm just using a Char Griller Smoker w/ firebox, I'm having a Santa Maria style pit built for me as well. I'm big into making my own BBQ Sauces as well, that's a new thing for me but it's definitely fun.

I'll be looking for tips on doing a brisket, I haven't ever done one by myself Just wondering some basic stuff, like if you guys mop briskets, do you smoke them for the full 10-12 hours or smoke for a few then finish in the oven? I'd prefer to smoke it the full time but I don't want it to dry out.

Here's my set up at work smoking some tri tips.

Howdy neighbor, I will respectfully disagree with you about California Q. We have some of the best cooks in the country. You just have to know where to go and it is not in any restaurants.

Sorry for the confusion, I mean there is no good BBQ supplied to the public like there is in TX. There are amazing BBQers and cooks in CA I know that for sure! I just miss how in TX you can go down the street and find a good local BBQ joint, here in So Cal they are few and far between.
