So the beginning of a long weekend of smoking pulled pork for 50 people for the brother-n-laws graduation is starting.
I spent last night making up rub and the start of mop sauce. Woke up to this scene this morning:
We are now at 2 triple batches of rub. Mop sauce is cooling off so I can run it through the blender, and get it into jars for travel tomorrow night.
Conrad my meat man called and the meat was in. Little dissapointed in what he could get his hands on. He has usually comes through with 10-12lber's. Instead he got me 5 shoulders at an average of 6.93lb for a total of 34.68lb.
Got them trimmed, oiled, rubbed up, wrapped in foil and back in the fridge.
Off to load up the charcoal, and all my tools. The old man will help me get the smoker loaded tomorrow afternoon before we leave.
Thought I would share what I have cooking this weekend. Will keep things updated as I can from NE Colorado at the graduation.
