My 1st smoke Labor Day

To start off my wife and I went to a Blues & bbq festival about a month
ago.I started to talk to the smokers they was really cool.With info and
tips.so I got me a cheap smoker to start with the famous E.C.B.I didn't
even know what the hell that was til I came across this GREAT site.
So I made my modifications.Got me a 9&1/2lb.Butt.And used the info
I got from all you GREAT folks on this site.I took some pics.IM000251.jpg

The cook was 10 1/2 hrs.The 1st hour or 2 was kind of hot at 275 to 300
sometimes.Then I was able to get a handle on the temps.to 250 to 275.
1st. time to use charcoal too!!!!!!
And it turned out AWESOME.Thanks to all the folks on this site for all the info!!!! I'm a smoker for life.The E.C.B is a great smoker to start with will use this for a while.Goin to try my hand at some Fatty's this weekened.
I always thought that was something different till I came across this site.

Way to go with the ECB. Nice bark and it looks yummy. How many times did you have to add charcoal?

Just about every 2hrs or so.Would add a handfull of coals and maybe
a chunk of hickory.Had to watch it when i added the hickory the temp
would start to climb.I think it might have been because it was dry.Left
the door open a little and brought the temp back down.
Would it be better to soak the wood a little before??

nice first smoke. no need to soak chunks-properly seasoned chunks won't absorb enough water to make a difference. try fewer briquettes when adding a chunk.
 
Great looking first smoke. As for soaking wood, I'm not really sure anymore myself. I have always been told to soak and then I joined the BBQ Brethern and found other websites like Amazing Ribs and ther are definitely differences in opinion. I'm trying both until I find out what works for me.
