Default 1st attempt at Brisket

Here is my first attempt at a brisket. Let me know what you think of the apperance of the meat and I think i will do a presentation like this, there is no garnish allowed at that competition. Seasoned outside with Montreal Steak Seasoning and made a special injection and mop sauce and then served with Au Jus

With Camera Flash on

I'd rather eat the one cooked with flash, but they both look pretty good.

Looks great from here, nice looking smoke ring, juicy. you just need to line up the slices so they look neater, and send my a couple of those chunks so I can taste it. and give ya a grade. I am an official backyard taster and judge of bbq. lol

My competition daze are probably behind me now; I pretty much cook for family, friends, and frankly the peace and solitude I get from smokin' on an offset...
