Holiday Leftover Cassoulet

After finally getting the house clean from all of our guests, I had a chance to try out a new enamel coated cast iron pot I got for Christmas. Luckily I was able to use up a lot of leftover fresh herbs, a duck I had smoked but never served due to an abundance of food, and a ton of micellaneous German sausages I had bought for Christmas Eve.

The result was a white bean, sausage and smoked duck cassoulet, a perfect cold weather, one pot meal.

Did you post before about that smoked duck? I think I could dig into that bowl!
 
Looks great Clint. If I made that in Minnesota, it would be casserole.
 
Definitely a great cold weather meal there. Nice iron pot too.

Never did. Between al of the cooking, guests and broken toe, I feel like I'm finally catching up. The crunchy bread chunks on top were the perfect compliment to all the soft meat and beans.
