J Jack2u2 Guest May 3, 2008 #1 First time with a smoked sirloin tip. Took it to 130 degrees, pulled it and let it rest for about 1 hour. Sliced really thin. Some provolone and pepper jack cheese, pasta salad and brocolli/cheese. I will certainly do this again!
