How Long To Wait
Ordered 4 pork butts got 5 butts and 4 NY shoulders instead. They are fresh and are too big to seal or put in my standard ziplocs. Thinking of just offering them up for sale to the masses but may not have time to cook until Friday night.
Question is - if they are in my meat frig that won't get opened until Friday night - how long will they keep? BTW - I called the company and they said consider it an early Christmas gift. They average about 15lbs.

I've seen some really huge Ziplocs for sale that you could use. Here are some 'small' 2 gallon ones on Amazon.

Could you wrap them in aluminum foil and butcher paper and keep in the fridge until Friday. Then fire up that new Spicewine, fill it up and let her go. Then freeze the meat after it's pulled. Is that a possibility?

The local Walmart (my favorite place to shop ) has both the 2 and the 2.5 gallon HD Ziplocks.
I would wrap tightly with plastic wrap first--to provide an "air barrier". Good Luck, TIM

i've seen these around somewhere...maybe sporting goods store? I think cabelas sells them. Like others suggested, if you're going to freeze, just wrap in HD foil and butcher paper??

Put a note out to my friends and co-workers today - sold them all (in a cooked state of course) in less than 20 minutes. I'll smoke them either tonight or tomorrow after I make my new basket for the spicewine. I gave them a deal - 4.00/lbs (felt guilty with the normal price.)
