... was earlier this week, and one market had a sale on. I removed the ribs and seasoned it with a mixture of Minor's AuJus Prep and a few shakes of Head Country Marinade, then some Moola Beef Rub. The Minor's makes it look good enough to eat before it's cooked!

This 3# roast took 2 hours with a kettle temp just shy of 250Ā°.

First, a thin end cut for breakfast the next day, and then some dinner size slices.

I think it's called a mini TC. The brain is one price and you can buy at least 5 or 6 different thermocouples including ones with cables. This TC is the fine tip and it has a 2 or 3 second response time. My other probe is like the one on a Thermopen but I use the fine tip most of the time. I can temp a shrimp that I'm sautƩing or come in from the side of a burger.

I've owned two of these therms for 5 or 6 years and have no complaints.

Man that looks good. So you used concentrated Minors as a wet binder for your rub? I bet that adds so great flavor!
 
I'm 100% stealing that method! I've got half a rib roast in the deep freeze right now that needs to be eaten.
