Picked up a few Choice NY Strips from Costco and had a few big ole Shrimp in the freezer, so decided on some Surf N Turf.


Seasoned the Strips with just SPG then smoked with a little chunk of Mesquite. A few minutes before searing, I hit all of them with some Oakridge BBQ seasoning. 2 with Carne Crosta & the other with SPOGOS, then seared. Did the shrimp with a little Cajun seasoning. Rounded out the meal with some simple Garlic Parm Butter Noodles (I'm lazy with sides on daily cooks). Happy with the results.

A Thermapen and some hot charcoal on the Weber to sear quick without raising the temp much goes a long way. Used to cook steaks by feel, but got “lazy” and decided to let technology take over. No going back now, the Thermapen is more accurate than I was…
