In there tough times we all need a shoulder to lean on.

I’ve chosen a whole pork shoulder.

.....

And so it begins!!

21 pounds of whole pork shoulder gonna smoke all night.

The whole shoulder contains both the butt and the picnic cuts.

I ordered it skin-on.

I didn’t trim other than to cut out the veins and glands right in the middle.

Just look at the color of this pork!

I scored the skin in a cross hatch and hit the whole shoulder with a HEAVY coating of coarse sea salt. No other rubs. Just salt and smoke will season the pork for the next 18-20 hours

Fat and skin stay attached and contribute to the flavor of the pork.

Smoker coming up to temp now
 
Looks good! Proud of your drink choice. I just sucked down a couple Voodoo Ranger imperial IPA, forgot what 9% alcohol does to me! Oh and I have loin back ribs and beans on the smoker!!
 
So 4 o’clock tomorrow sound about right? Good! What do we need ta bring?


That looks fantastic and the smoke coming outta that cooker tomorrow morning should be AMAZING!!!
